SPINACH OPEN PIE WITH OLIVES AND SESAME
INGREDIENTS
½ sheet crust
1½ kilo spinach
200 g. “Arcadia” Kalamata olives sliced
4 tablespoons sesame
150 g. feta cheese
4 spring onions
3 leeks
1 bunch fresh dill
5 tablespoons trachana
4 eggs
1 cup olive oil
Salt and pepper
METHOD
Wash the spinach, cut into pieces and blanch in boiling brine. The drain and the track very well with hands. Heat the oil in a nonstick pan and add the leeks and onions chopped. Once wilted, add the spinach and sauté lightly. Add olives, chopped dill and slice into pieces. Remove from the heat and alatopipronoume. Add the trachana, beaten eggs and stir.
