PENNE WITH KALAMATA OLIVES
1 package penne pasta
1 cup “Arcadia” Kalamata sliced olives
½ cup “Arcadia” capers
½ extra virgin olive oil
4 tomatoes, chopped
1 onion, finely chopped
2 cloves garlic, finely chopped
½ teaspoon oregano
1 cup water
Salt and pepper
METHOD
Rinse the capers and drain them. In a saucepan sauté the onion, while stirring, until caramelized. Add the remaining ingredients except the pasta, stir and let it boil for a couple of minutes. Lower the heat to medium and continue cooking for 10-15 minutes, until the sauce thickens. Meanwhile in a pot of boiling salted water, add the pasta, stir and cook as long as the time indicated on the packaging. Drain it and put it back into the pot. Add the sauce, stir to mix and serve with grated cheese.
